Elisha's Healthy Winter Dessert Recipe

Vie Activist and Dubai based pilates instructor, Elisha Elliott shares with us her favourite dessert recipe that is just perfect for a cold winter's night. Not only is this recipe delicious and super healthy, it is really easy to make with minimal preparation time needed. Be sure to serve this crumble at your next dinner party for guaranteed happy (and impressed) guests.

Ingredients:

  • 3/4 cups blueberries and 4 sliced apples (depending on personal preference you can just have blueberries or apples. I like both!) 
  • juice of one lemon 
  • 1 cup almond meal/flour 
  • 1/4 cup chopped macadamias 
  • 1/4 cup melted butter or coconut oil 
  • 3 tablespoons of rice malt syrup 
  • 1/4 teaspoon cinnamon 
  • pinch of sea salt 

Preparation:

  • Preheat oven to 180 degrees
  • Place blueberries and apples in a baking tray and drizzle with juice of half a lemon. Stir lightly to cover all the fruit with lemon juice
  • In a mixing bowl combine the almond meal/flour, macadamia nuts, butter, rice malt syrup, cinnamon, salt and remaining lemon juice 
  • Evenly spread the nut mixture over the fruit
  • Place in oven and bake until the fruit is well cooked (bubbly) and the nut mixture is golden brown (approx 30-40 mins)
