Kale and Spinach Fritters (green pancakes!)

In her recent blog post on Honey HNY, Vie Activist Katrina Loop talked about the health benefits of Kale.

Health conscious foodies have been having a love affair with Kale for some time now, and unless you have been hiding under a huge rock in the desert, you either know some of the nutritional benefits of this kinky leaved green, or at the very least know that there are nutritional benefits (you just don’t know what they are yet!). Wondering what to do with your new curly best friend?

Try these delicious green pancakes courtesy of our gorgeous Vie Activist, Lee Bachar-Adlar.

Ingredients:
  • One bunch of kale
  • One bag of baby spinach 
  • 2 eggs
  • Half a cup of cooked quinoa
  • Half a cup of raw oat meal (you can use almond meal instead)
  • Half a block of feta cheese
  • Salt and pepper
Preparation:
Mix all the ingredients in the food processor or the blender (mixture is meant to be quite liquid, but you can always add more of the oat meal to firm the mixture)
Using a table spoon to create small fritters in the frying pan on medium heat.
Can serve with cream cheese and can be eaten cold as well.
