Brilliant Bean Burgers

These delicious bean burgers are a quick easy meal that all the family will enjoy. You can add them to a bread bun or a simply prepared salad. Either way they're bound to get two thumbs up!

Ingredients:
420g can of Five bean mix, drained and rinsed
300g can of Butter beans, drained and rinsed
2 cups of fresh bread crumbs
1 teaspoon of ground Cumin
1/4 cup of Corn
1/4 finely choppped Onion
1 Egg lightly beaten 
1/4 cup of Coriander leaves
1/4 Lemon, juiced

Method:
Place all Beans into a  food processor. Pulse beans until roughly chopped. Transfer to a large bowl and add 1 cup of Bread crumbs, cumin, coriander, lemon juice, corn, egg and onion. Mix contents together.

Once all mixed, use a spoon to scoop up the bean mixture, and make the patties into a size that suits you.

Sprinkle the rest of the bread crumbs over the finished patties, so they don't stick together.

Once prepared, get a frying pan and add a tablespoon of olive oil. Once the oil is heated, gently place patties into the pan, and cook until lightly golden on each side. They will take roughly 8 minutes each side. 

If you have it, try serving them with a side of natural yoghurt. It compliments them deliciously.

They will keep in the fridge, so if you have any left overs, they will make a great lunch snack.
