What We Eat: A pomegranate, chicken and brown rice salad

At Vie Active we love our lunch time ritual of preparing lunch and eating it together, then finishing off with a cup of herbal tea and a bliss ball. We are all 'foodies', so having fresh and healthy lunches are a must. This is one of our favourite lunch time salads, mixing salty and sweet with a delectable mix of pomegranate seeds, roast chicken and brown rice. Yum! 

Ingredients

  • 300g roast chicken 

  • 1 1/2 cups of brown rice 

  • 4 large handfuls of spinach or rocket (or even a mix of both)

  • 1 large handful of red cabbage 
  • 2 tbsp olive oil

  • 2 tbsp apple cider vinegar (our salad dressing must-have!)
  • Himalayan rock salt and freshly ground black pepper

  • A splash of lemon juice
  • 1 Pomegranate (seeds only)
Method
  1. Toss together the spinach and red cabbage with the olive oil, apple cider vinegar and salt and freshly ground pepper.

  2. Add the roast chicken and brown rice to the salad mixture and toss. 
  3. Scatter the pomegranate seeds, then drizzle with lemon juice. Serve straightaway.
