On these warm summer days, I like to eat light and make the most of fresh produce. This salad and fish combo is a winner, It's light, fresh, easy to prepare. Pete Evans is one of our favourite chefs, he always has great healthy recipes to share! We particularly love this green smoothie recipe as it packs in so many different green veggies!!
Recipe:
A big bunch of kale leaves
A handful of mint
A handful of parsley
2 peeled lemons, chopped
2 green apples, chopped
4 pitted prunes
A small knob of ginger, finely chopped
2 cucumbers, chopped
2 sticks of celery, chopped
2 tablespoons of 'Garden of Life' Super Greens (optional)
3 cups of Natural Raw C coconut water
All whizzed up in a high speed blender, and down the hatch first thing on an empty stomach = ideal!
